As soon as the olives start to be ripped the harvest starts. The olives are handpicked and brought immediately to oil mill and milled every evening, within 8 hours from the harvest, to ensure a very low acidity and to preserve all its valuable components and its characteristic flavors, typical of the Sicilian oil. The olives are processed in continuous cycle in a system of the latest generation.
The oil produced is placed in 50 liters steel containers and shipped by courier to Biella, where the final storage takes place in stainless steel silos at a temperature never lower than 10 degrees.
Infact, to have an excellent product even after harvesting, It is important that the oil storage is done by following simple rules: close totally the container after using it, store the oil in a placed away from sources of heat and away from sunlight and in an environment where the temperature never drops below 10 degrees (the optimal range is between 10 ° C and 18 ° C).
Subsequently, oil is bottled and packed in 0.25, 0.50 and 0.75 liter bottles and in 0.5, 3 and 5 liter cans.
